Just Because It's Spring Doesn't Mean You Should Put Away Your Crock Pot!

While the weather is vacillating all over the place in Chicago while spring tries to (yes, pun intended) spring, plenty of other places are finally enjoying warmer weather. That doesn't mean it's time to put your crock pot away for the season, however.

You can make delicious meals all year long in your slow cooker, ones that are lighter and delicious without the heavy, creamy comforts we crave in the colder months.

The time savings alone from the crock pot is worth it for me. Future Me always loves Past Me when she comes home to find dinner ready to go because I popped it in that morning.

Enjoy these four family favorites!

Carnitas is one of my favorites, and I love making a big batch to use for a few days. It's great over rice, on a potato, in a burrito (or burrito bowl), for Taco Tuesday, and so much more.

Chicken Tortilla Soup is another simple one that has so much flavor, and I always have leftovers, which is yet another win. This recipe even shares how to make those crispy tortilla strips to top it with.

We make this Garlic Roast Pork all the time. My kids used to beg for "korp" even before they knew how to pronounce it, and nothing has changed all these years later. Plus it has just a few simple ingredients, so it's really fast to make.

My kids also beg for Crock Pot Mexican Beef. When I want to be fancy, I serve it as an appetizer in masa cups I make, but this is another one that's delicious for tacos and burritos and more.
